8 large eggs
1/2 cup heavy whipping cream
12oz cooked corned beef
14oz Frank’s Kraut (drained)
4 slices rye toast cubed
8oz shredded Swiss cheese
4 tablespoons thousand island dressing
Salt and pepper to taste
Chopped parsley for garnish


  1. Pre-heat oven to 350ºF.
  2. In a large bowl, mix cooked corned beef, Frank’s Kraut, Toasted rye, Swiss cheese and thousand island. In a separate large bowl, beat eggs, heavy whipping cream, salt and pepper.
  3. Add egg mixture into kraut mixture and stir well.
  4. Pour mixture into a greased cast iron skillet (or 9x13 baking dish) and bake at 350ºF for 30-45 minutes or until a knife comes out of the center clean.
  5. Garnish with chopped parsley and serve. Enjoy!
