Reuben Empanadas

Cooking Method Oven

Ingredients

4 pre-made pie crust dough
1 lb. thin sliced corned beef
1 14oz can Frank’s Kraut
2 cups of shredded Swiss cheese
1 egg (for egg wash)
Olive oil
Thousand Island dressing for dipping.

Instructions

  1. Pre-heat your oven to 375ºF
  2. Start making your filling by combining corned beef, Frank’s Kraut, and Swiss cheese in a large bowl.
  3. Lay out your pie crusts and cut individual circles 3-4” in diameter (or if you’re using an empanada press, cut to fit).
  4. Place a tablespoon of filling in the center of the dough circle and fold the dough in half, sealing the edges using a fork. If you have an empanada press, oil it up before use, it will help the empanadas release.
  5. Once you have created all of your empanadas, beat one egg and brush the surface of each empanada with egg wash.
  6. Bake at 375ºF for 20-30 minutes or until golden brown. Serve with thousand island for dipping!
