Ingredients
4 pre-made pie crust dough
1 lb. thin sliced corned beef
1 14oz can Frank’s Kraut
2 cups of shredded Swiss cheese
1 egg (for egg wash)
Olive oil
Thousand Island dressing for dipping.
Instructions
- Pre-heat your oven to 375ºF
- Start making your filling by combining corned beef, Frank’s Kraut, and Swiss cheese in a large bowl.
- Lay out your pie crusts and cut individual circles 3-4” in diameter (or if you’re using an empanada press, cut to fit).
- Place a tablespoon of filling in the center of the dough circle and fold the dough in half, sealing the edges using a fork. If you have an empanada press, oil it up before use, it will help the empanadas release.
- Once you have created all of your empanadas, beat one egg and brush the surface of each empanada with egg wash.
- Bake at 375ºF for 20-30 minutes or until golden brown. Serve with thousand island for dipping!
