Colcannon with Kraut
2 ½ - 3 cups potatoes mashed
1 Onion large, sliced
1 Can Frank’s Kraut 14oz can Frank’s Quality Kraut, rinsed and drained
4 tbs butter
- Melt 2 tablespoons of butter in a large skillet, over medium heat.
- Sautee onions and sauerkraut. Add in mashed potatoes and stir until combine.
- Cook until heated through.
- Season with salt and pepper and top with remaining 2 tablespoons of butter.
