
Sweet and Savory Mustard Kraut Casserole with Apples and Bacon

Ingredients
12 oz. thick cut bacon, cut into about 1-inch-thick strips
1 medium red onion, diced
1 sweet/red apple, diced
½ cup brown sugar, tightly packed
1 16 oz. jar Frank’s Mustard Kraut (not drained)
¼ tsp. salt, or to taste
1 tsp. black pepper, or to taste
Minced fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350 degrees F. Lightly grease an 8” x 8” baking dish or small casserole dish and set aside.
- Heat a medium skillet over medium/high heat. Add the bacon and cook, stirring occasionally, until crispy; about 10 minutes. Transfer the bacon to a paper towel-lined plate and set aside.
- Remove all but 1 to 2 tablespoons of bacon grease from the skillet. Add the onion and sauté, stirring occasionally, until soft and translucent; about 5 to 8 minutes.
- Add the bacon to your prepared casserole dish, along with the red onion, diced apple, brown sugar, mustard kraut, salt, and pepper. Mix until everything is well combined.
- Bake at 350 degrees F for 45 to 60 minutes.
- Garnish with fresh parsley, if desired, and serve immediately.
