Sweet and Savory Mustard Kraut Casserole with Apples and Bacon

Ingredients

12 oz. thick cut bacon, cut into about 1-inch-thick strips
1 medium red onion, diced
1 sweet/red apple, diced
½ cup brown sugar, tightly packed
1 16 oz. jar Frank’s Mustard Kraut (not drained)
¼ tsp. salt, or to taste
1 tsp. black pepper, or to taste
Minced fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease an 8” x 8” baking dish or small casserole dish and set aside.
  2. Heat a medium skillet over medium/high heat. Add the bacon and cook, stirring occasionally, until crispy; about 10 minutes. Transfer the bacon to a paper towel-lined plate and set aside.
  3. Remove all but 1 to 2 tablespoons of bacon grease from the skillet. Add the onion and sauté, stirring occasionally, until soft and translucent; about 5 to 8 minutes.
  4. Add the bacon to your prepared casserole dish, along with the red onion, diced apple, brown sugar, mustard kraut, salt, and pepper. Mix until everything is well combined.
  5. Bake at 350 degrees F for 45 to 60 minutes.
  6. Garnish with fresh parsley, if desired, and serve immediately.
