Ingredients

6 fully cooked sausage links (such as bratwurst or smoked sausage)
6 taco-size flour tortillas
1 ½ cups shredded cheese (I used Colby Jack)
1 – 1 ¼ cups Frank’s Mustard Kraut, drained
Toothpicks for securing the roll ups

Instructions

  1. Slice each sausage in half lengthwise, cutting about 3/4 of the way through and leaving one side intact (like you’re butterflying the sausages). Open and flatten like a book.
  2. Place a skillet over medium heat. When the skillet is hot, place the cut side of each sausage flat onto the skillet. Cook for about 5 minutes or until the cut side of the sausage begins to brown. Flip the sausages over and cook for another 3 to 5 minutes, or until the top side is browned. Remove from the skillet and set aside.
  3. Heat the tortillas slightly in the microwave just to soften them. This should take about 15 to 30 seconds.
  4. Now it's time to build your roll ups. Divide the shredded cheese evenly down the center of each tortilla. Next, add one sausage to each tortilla cut side up. Add a couple spoonful's of mustard kraut on top of each sausage. Carefully roll up the sides of the tortilla until they are just overlapping and secure with a toothpick.
  5. Serve immediately.
