
Sausage and Mustard Kraut Roll Ups

Ingredients
6 fully cooked sausage links (such as bratwurst or smoked sausage)
6 taco-size flour tortillas
1 ½ cups shredded cheese (I used Colby Jack)
1 – 1 ¼ cups Frank’s Mustard Kraut, drained
Toothpicks for securing the roll ups
Instructions
- Slice each sausage in half lengthwise, cutting about 3/4 of the way through and leaving one side intact (like you’re butterflying the sausages). Open and flatten like a book.
- Place a skillet over medium heat. When the skillet is hot, place the cut side of each sausage flat onto the skillet. Cook for about 5 minutes or until the cut side of the sausage begins to brown. Flip the sausages over and cook for another 3 to 5 minutes, or until the top side is browned. Remove from the skillet and set aside.
- Heat the tortillas slightly in the microwave just to soften them. This should take about 15 to 30 seconds.
- Now it's time to build your roll ups. Divide the shredded cheese evenly down the center of each tortilla. Next, add one sausage to each tortilla cut side up. Add a couple spoonful's of mustard kraut on top of each sausage. Carefully roll up the sides of the tortilla until they are just overlapping and secure with a toothpick.
- Serve immediately.
