
Reuben Snack Wraps

Ingredients
4 soft taco or fajita-sized flour tortillas
8 slices Swiss cheese (thinly sliced)
7 oz. pastrami or corned beef (about 16 thinly sliced pieces)
1 cup Frank’s Kraut, drained well
4 – 8 sandwich stacker-style dill pickle slices (dill pickle chips would also work)
4 tbsp. thousand island dressing
Instructions
- Lay out the tortillas on a counter or workstation. Place 2 slices of the thinly sliced Swiss cheese, slightly overlapping, onto each tortilla. Top the cheese with 4 slices of the thinly sliced pastrami or corned beef. Next, add about ¼ cup of the kraut to each tortilla. Microwave the wraps on high, one or two at a time, on a microwave safe plate for 45 to 60 seconds, or until everything is warm and the cheese is melted. This time may vary depending on your microwave.
- Next, top each tortilla with 1 to 2 pickle slices and about 1 tablespoon of thousand island dressing. Fold up into a wrap and enjoy!
