
Reuben Egg Rolls Recipe
Ingredients
16 large egg roll wrappers
16 slices corned beef
16 slices Swiss cheese
1 cup Frank’s Kraut, drained
Thousand island dressing, for dipping
Vegetable oil, for frying
Instructions
- In a large pot or wok, preheat about 1-inch of oil to 350 degrees, Fahrenheit.
- While oil is heating, top each wrapper with one slice each of cheese and corned beef. Place about a tablespoon of kraut in the center of each, before rolling. Fold in the sides as you roll, (like a burrito) and seal the edge with water.
- Once assembled, fry egg rolls until golden brown, about 1 minute per side. Be sure to fry in batches of 2 or 3 so as not to overcrowd the pan.
- Serve with thousand island for dipping and enjoy!
