Ingredients

1 cup bottled thousand island dressing
2 tbsp. hot sauce
1 ½ - 2 tsp. chile powder
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. black pepper
22 oz. bag frozen waffle fries
8 oz. pastrami or corned beef, chopped
1 14 oz. can Frank’s Kraut, drained very well
8 oz. freshly shredded Swiss cheese (about 3 cups shredded)
1 tsp. caraway seeds
1 cup chopped dill pickles, drained very well
Minced parsley for garnish (optional)

Instructions

  1. In a small mixing bowl, whisk together the thousand island dressing, hot sauce, chile powder, garlic powder, onion powder, and black pepper. Set aside.
  2. Arrange the waffle fries in a single layer on a large, rimmed baking sheet lined with parchment paper or aluminum foil. Bake according to package directions.
  3. Remove the waffle fries from the oven and reduce the heat to 375 degrees F.
  4. Evenly sprinkle the pastrami or corned beef over the fries, followed by the Frank’s Kraut, Swiss cheese, and caraway seeds.
  5. Bake for 8 to 12 minutes, or until the cheese is bubbly and melted.
  6. Remove from the oven and sprinkle the chopped dill pickles over the top. Drizzle the zesty thousand island dressing over the top and garnish with minced parsley if desired.
  7. Serve immediately with extra thousand island for dipping.
