Frank's Kraut & Gochujang Fried Rice
Ingredients
4 eggs
1/2 can Frank's Kraut (can use more to taste!)
1 sweet onion, chopped
3 cloves garlic, minced
1 tsp sesame oil

4 cups white rice (cooked, preferably the day before & cold)
1 cup frozen peas
1/2 cup shredded carrots
1 tbsp sesame oil
-for the sauce:
1 tbsp gochujang
1/2 cup coconut aminos (or soy sauce)
2 tbsp sesame oil
1/2 - 1 tsp crushed red pepper flakes
-optional:
green onions
sesame seeds
Instructions
- In a greased non-stick pan, gently scramble the eggs. remove and sit to the side.
- In the same pan,
- add the 1 tsp sesame oil, along with the onion, garlic and kraut. Sauté until onion is translucent, about 5-7 minutes.
- Remove and sit to the side.
- In the same pan, add the remaining 2 tbsp of sesame oil. Allow to heat over medium/high and then add the rice.
- Press rice into an even layer and allow to crisp up before stirring around (about 4minutes).
- Continue allowing the rice to fry for about 8-10 minutes.
- Meanwhile, whisk all sauce ingredients until combined, then sit to the side.
- Remove the rice from heat. Stir in sauce, peas and carrots and mix gently until fully combined.
- Next, add the scrambled eggs and the sauerkraut mixture back into the pan and gently fold into the rice.
- Optional: top the fried rice with chopped green onions and sesame seeds.
