Frank's Kraut & Gochujang Fried Rice

Ingredients

4 eggs
1/2 can Frank's Kraut (can use more to taste!)
1 sweet onion, chopped
3 cloves garlic, minced
1 tsp sesame oil
-
4 cups white rice (cooked, preferably the day before & cold)
1 cup frozen peas
1/2 cup shredded carrots
1 tbsp sesame oil
-for the sauce:
1 tbsp gochujang
1/2 cup coconut aminos (or soy sauce)
2 tbsp sesame oil
1/2 - 1 tsp crushed red pepper flakes
-optional:
green onions
sesame seeds

Instructions

  1. In a greased non-stick pan, gently scramble the eggs. remove and sit to the side.
  2. In the same pan,
  3. add the 1 tsp sesame oil, along with the onion, garlic and kraut. Sauté until onion is translucent, about 5-7 minutes.
  4. Remove and sit to the side.
  5. In the same pan, add the remaining 2 tbsp of sesame oil. Allow to heat over medium/high and then add the rice.
  6. Press rice into an even layer and allow to crisp up before stirring around (about 4minutes).
  7. Continue allowing the rice to fry for about 8-10 minutes.
  8. Meanwhile, whisk all sauce ingredients until combined, then sit to the side.
  9. Remove the rice from heat. Stir in sauce, peas and carrots and mix gently until fully combined.
  10. Next, add the scrambled eggs and the sauerkraut mixture back into the pan and gently fold into the rice.
  11. Optional: top the fried rice with chopped green onions and sesame seeds.
