Frank’s Kraut Croquettes

Yields 6-8 servings

Ingredients

1 large yellow onion, diced
1 14-oz can Frank’s Kraut, drained and chopped
2.5 cups mashed potatoes
Mozzarella cheese, cut into small (1cm) cubes
1 cup cornstarch
Oil, for frying

Instructions

  1. In a medium skillet, cook onions and kraut over medium heat with a teaspoon of oil and a pinch of salt. Caramelize by cooking until golden brown. Allow to cool.
  2. Form croquettes by mixing kraut and onions with mashed potatoes and rolling into one-inch balls. Place a cube of cheese in the center of each.
  3. Heat an inch of oil in a large skillet over medium heat, for frying.
  4. Coat each croquette with cornstarch and fry until golden. Sprinkle with salt and enjoy!
