BBQ Kraut Grilled Cheese Sandwich

Ingredients
2 large, thick slices of sandwich bread
½ tbsp. butter (softened to room temperature), divided
2 slices American cheese
1/4 - 1/3 cup shredded sharp white cheddar cheese, divided
1/4 - 1/3 cup Frank’s Sweet & Smoky BBQ Kraut, drained and excess liquid squeeze out
Instructions
- Heat a medium skillet over low heat.
- Divide the butter between both slices of bread and spread a thin layer on one side of each slice. Place one slice of bread, butter side down, in the warmed skillet. Next, place one slice of American cheese on top of the bread and add half of the shredded white cheddar on top of the American cheese. Next, add the BBQ kraut. Top the kraut with the remaining shredded white cheddar and second slice of American cheese.
- Cover with a lid and cook until the cheese is melted, and the bottom of the bread is golden brown, about 7 to 8 minutes or so.
- Remove the lid and place the second slice of bread, butter side up, on top of the sandwich. Carefully flip the sandwich upside down so the uncooked bread is now on the bottom.
- Cook, uncovered, until the bottom slice of bread is golden brown, about 5 to 7 minutes or so.
- Serve immediately with chips and pickles on the side, if desired.
