BBQ Kraut and Chicken Pizza with Homemade Pizza Dough

Ingredients

For the Pizza Dough:
1 cup warm water (about 105 degrees F)
1 Tbsp. sugar
1 Tbsp. active dry yeast
2 Tbsp. olive oil, divided
2 ½ cups all-purpose flour
1 tsp. salt
For the Pizza:
½ cup BBQ sauce (plus extra for garnish)
2 cups shredded cheese (mozzarella, cheddar jack, or pizza blend work great)
1 cup diced or shredded cooked chicken
¼ of a small red onion, cut into thin strips
¾ cup Frank’s Sweet & Smoky BBQ Kraut, drained and excess liquid squeezed out
1 Tbsp. melted butter
Flaked or coarse salt for garnishing the crust (optional)
Cilantro for garnish (optional)

Instructions

Instructions for the Pizza Dough:
  1. In a large mixing bowl, gently whisk together the warm water, sugar, and active dry yeast. Let sit for 5 minutes, or until bubbles form and the top of the mixture becomes foamy. Once this happens, gently stir in 1 tablespoon of the olive oil.
  2. Add the flour and salt to the mixture. Stir, using a wooden spoon or sturdy spatula, until a ball begins to form. The dough should be smooth but slightly sticky.
  3. Remove the dough from the bowl and wipe out any excess flour. Add the remaining tablespoon of olive oil and rub all over the inside of the bowl. Place the dough ball back into the bowl, cover with plastic wrap, and let rise in a draft-free space for 1 hour, or until the dough has doubled in size.
  4. After the dough has risen, lightly dust your hands with flour and punch the dough down gently in the bowl. Transfer to a lightly floured surface. Knead the dough about 5 to 10 times, until you have a smooth, round ball.
  5. Lightly flour the top of the dough and roll into a 12-inch disc. Transfer the disc to a parchment-lined pizza pan or round baking sheet. Reshape the dough as needed into a circle.
Instructions for the Pizza:
  1. Preheat the oven to 425 degrees F.
  2. Brush the prepared pizza dough with the BBQ sauce, leaving about ½ to 1-inch of empty space around the edge for the crust. Add 1 ½ cups of the shredded cheese on top of the BBQ sauce. Top the cheese with the chicken and red onion. Next, spread the Frank’s Sweet and Smoky BBQ Kraut evenly over the top of the pizza. Top with the remaining ½ cup of shredded cheese.
  3. Brush the melted butter around the edges of the dough and lightly sprinkle the crust edge with flaked or coarse salt if desired. Bake in the preheated oven for 15 to 20 minutes.
  4. Top with fresh cilantro, if desired, and drizzle with extra BBQ sauce. Slice and serve immediately.
