
BBQ Chicken and Kraut Sandwich
Ingredients
3 - 4 chicken breasts
1 tsp. salt
½ tsp. black pepper
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. paprika
1 tsp. dry mustard
½ - 1 tsp. chili powder, or to taste (optional)
1 (18 – 20) oz. bottle BBQ sauce
1 (16 oz.) jar Frank’s Sweet & Smoky BBQ Kraut
4 hamburger buns
Pickle chips for serving (optional)
Thinly sliced onion for serving (optional)
Instructions
- Heat your oven to 375 degrees F.
- In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, paprika, dry mustard, and chili powder if using. Set aside.
- Pat the chicken breasts dry using paper towels and place in a large baking or casserole dish. Sprinkle all sides of each piece of chicken with the seasoning mixture, pressing the seasoning into the meat. Using a sharp knife, cut about three diagonal slits on the top of each chicken breast, being careful not to cut all the way through.
- Next, pour the BBQ sauce evenly over the chicken, making sure each piece is coated in sauce. Add about half of the jar of BBQ Kraut to the baking dish and mix into the BBQ sauce.
- Bake for 35 to 45 minutes, or until the internal temperature of the thickest part of the chicken reaches 165 degrees F. NOTE: Check the chicken after about 20 to 30 minutes of cooking. If the sauce is starting to get dark, cover with foil and continue cooking until the chicken is cooked through.
- Place the cooked chicken in a large bowl and shred using two sturdy forks. Scoop the remaining sauce and kraut mixture into the bowl and toss the chicken until well coated.
- Evenly distribute the shredded chicken and sauce between the hamburger buns and top with extra BBQ kraut, pickle chips, and sliced onion. Enjoy!
