Ingredients
1 – 2 eggs
1 (4.2 oz.) can tinned fish packed in olive oil (I used sardines)
1 cup Frank’s Sweet Bavarian Style Kraut, drained
½ small cucumber, thinly sliced
½ cup halved grape or cherry tomatoes
½ small red onion, thinly sliced into rounds
½ cup olives of choice (I used green olives)
3 – 5 radishes, thinly sliced
Olive oil for serving
Salt to taste
Black pepper to taste (fine or coarse ground)
Lemon wedges for serving
Fresh dill for serving
Crackers for serving
Instructions
- Fill a small saucepan with about 1/2 inch of water and place over medium high heat. Bring the water to a boil. Using tongs, carefully place the eggs into the water. Cover and lower the heat to medium. Cook for 8 minutes for a jammy egg or 10 to 12 minutes for a hardboiled egg. Transfer the saucepan to a kitchen sink and run cool water over the eggs to stop the cooking process. When the eggs are cool enough to handle, peel and cut in half lengthwise.
- Add the egg halves to a large plate along with the opened tin of fish. Next, arrange the Bavarian kraut, cucumber slices, tomatoes, red onion, olives, and radishes on the plate.
- Drizzle the onion slices with olive oil and sprinkle the onions and eggs with salt and pepper.
- Serve with lemon wedges, fresh dill, and your favorite crackers. Enjoy!
